Zucchini Brownies

I have been making sweet treats of late but using healthy ingredients.. yep they all have a bit of butter or sugar but they are also all wholesome ingredients be it gluten or diary free, made from vegetables or boosted by superfoods..

The kids have them in lunch boxes thinking I am the best and I get to feel like a goody two shoes. Um that would be a win, win.

Everytime I share my mid bake pictures on FB or Instagram I get asked for the recipe so here I am again to share :)





  • 2 eggs
  • 1 tbsp vanilla extract
  • ¾ cup coconut/raw sugar
  • ¼ cup apple puree
  • 1 cup spelt flour
  • ½ cup Cocoa
  • 1½ teaspoons baking soda
  • ¼ teaspoon salt
  • 300 – 320 grams peeled and grated zucchini
  • 1 cup chocolate chips .. if you fancy
  • Preheat the oven to 180 degrees C and line an 8"x8" pan
  • Mix together the eggs, vanilla, sugar and apple puree and let this sit for 5 minutes
  • In another bowl, mix the flour, cocoa, baking soda and salt. Make sure it is all smooth with no lumps
  • Add the dry mix to the wet, gently stir until combined. Just don't overmix it
  • Fold in the zucchini and chocolate chips if using
  • Pour the batter into the pan and even the surface with a spatula.
  • Bake for 30 - 35 minutes until a skewer inserted removes clean.

  3. I would use the love heart beads on our front door. My husband and I are newly weds and currently are building our first family home. The love heart represents our family being binded together and the love we share. We are looking forward to our first leap into the big wide world on our own as a little family as we have never lived away from my inlaws. These beads are simply stunning and i adore the organic, bohemian style which matches our decor.

  5. The beads and planter would be great to hang in our laundry. It's the one place that gets overlook when decorating and it would make me smile while I do the endless washing for the family!
